Three noodle dishes, three sets, and two sides

Jeju Gogi-guksu (pork noodle soup) combines a savory broth with pork carrying a charcoal aroma. Taste the broth first, then eat the noodles and pork together. Gogi means meat, and guksu means noodles.

Jeju Yujireum Gol-dong-myeon (perilla oil mixed noodles) is a broth-free dish of buckwheat noodles mixed with perilla oil. Gol-dong-myeon refers to mixed noodles. It is made without fish sauce.

Jeju Bibim Gogi-guksu (spicy mixed pork noodles) is mixed with sauce and pork. Try it as served, then add the kelp vinegar little by little for a brighter, tangier finish.

The Jeju Gogi-guksu Set includes pork noodle soup, dombe pork, and mini Mun-gamja. The Jeju Yujireum Gol-dong-myeon Set pairs the perilla oil noodles with the same two sides. The Jeju Bibim Gogi-guksu Set follows the same format with spicy mixed pork noodles.

How to choose

Begin with the flavor and format you want

For a first visit, start by looking at the sets. A set adds dombe pork and Mun-gamja to a noodle dish, so you can try several parts of the menu without placing separate orders for every item.

Choose Jeju Gogi-guksu when you want hot broth. Pick Jeju Yujireum Gol-dong-myeon for the nutty flavor of perilla oil. If you want a spicy, tangy dish, choose Jeju Bibim Gogi-guksu and adjust it with the kelp vinegar.

When two or more people are dining together, choose different noodle dishes and share Modern Dombe Pork or Jeju Mun-gamja in the center. This keeps each person's main dish distinct while adding more textures to the table.

With Jeju Gogi-guksu, try the broth before adding anything. Next, lift noodles together with a piece of pork and notice whether the broth or charcoal aroma reaches you first.

Mix Jeju Yujireum Gol-dong-myeon well so the perilla oil coats the buckwheat noodles evenly. Its rich, nutty character contrasts clearly with the warm pork noodle soup.

Add the kelp vinegar to Jeju Bibim Gogi-guksu gradually rather than pouring it all at once. Taste one piece of dombe pork on its own, then another with noodles.

Break open Jeju Mun-gamja to see the potato and octopus inside. The soft potato, chewy octopus, and crisp exterior bring different textures into one bite.
