Our Story

Modern Dombe Began with Everyday Life in Jeju

Modern Dombe (모던돔베) is a restaurant on 1100-ro in Jeju City, about 15 minutes by car from Jeju Airport, serving Jeju gogi-guksu, perilla oil gol-dong-myeon, and dombe pork.

01

Founding story

Remembering hands that worked at sea and in the fields

Owner and chef Kim Seong-cheol (김성철) was born in Jeju. His mother was a haenyeo, a Jeju woman diver, and his father farmed the land. This family background is based on a regional media introduction published in 2022.

For a traveler, Jeju may be an island visited for a few days. For someone who lives here, it is a place to work, eat, return home, and prepare for the next day. The Modern Dombe story begins with those everyday lives rather than with a postcard view.

A haenyeo's hands carry time spent in the sea. A farmer's hands carry time spent tending the soil. Modern Dombe does not turn those facts into an invented family biography. It uses the confirmed background to look at the work that comes before a meal.

Modern Dombe opened in late August 2021. The story does not add an unconfirmed first guest, childhood scene, or opening-day weather. It stays with the opening period and the owner's attitude of continuing to refine the restaurant after the doors opened.

Brand direction

Modern Dombe of Jeju, by Jeju, for Jeju

This is the phrase Modern Dombe has used on its Naver Place profile. The restaurant keeps the names of Jeju foods while shaping the menu and space so today's guests can choose and enjoy them comfortably.

Gogi-guksu and dombe pork connect with food long shared in Jeju. Perilla oil gol-dong-myeon and Mun-gamja give the table different flavors and textures. The dishes are not identical, but they meet around the idea of a meal eaten in Jeju.

Modern Dombe does not claim to represent every ingredient or cooking method on the island. The site presents the confirmed menu and the direction the restaurant has chosen in language a traveler can understand.

03

How we read Modern Dombe

A name that brings Jeju food to today's guest

Not making a new Jeju, but helping guests encounter Jeju food in a new way. This is our reading of the menu and story, not a quotation about how the owner chose the name.

Familiar Jeju food names remain, while the site explains how to choose a dish, how flavors differ, and how the meal may fit into a travel day. Until a confirmed account of the founding motive or naming process is available, this interpretation will not be presented as the owner's direct words.

We do not read modern as leaving older Jeju food behind. We read it as a question: how can a dish remember where it came from and still meet the table of the present?

04

Reading the name

Dombe is the Jeju word for a cutting board

Dombe pork refers to pork placed on a cutting board and sliced for eating. In Jeju, pork was shared at important family and community occasions, and people gathered around the board to eat piece by piece.

Knowing the word dombe gives us more than the name of a wooden board. It also brings to mind the scene of food placed in the middle and people drawing closer around it.

Pork was used for major occasions such as weddings and funerals in Jeju, and gogi-guksu was also served at feasts and family events. The name becomes easier to understand when we picture pork shared from a board and noodles eaten together.

We read modern as a way of asking how to introduce Jeju food to the guest arriving today. This is a clearly labeled editorial reading, not a confirmed explanation of the naming process.

The chef's attitude

Even one word or one line is worth revisiting

For Kim Seong-cheol, changing a single word or line for the restaurant can carry meaning. Rather than relying on a large slogan, he pays attention to the sentences guests actually read and to clearer ways of explaining the menu.

He returns to what guests have written and considers how to respond. A good review is not only something to display. It can also reveal what the next guest may want to know about a dish or a visit.

He hopes a good afterimage from Modern Dombe becomes a good memory of Jeju. The focus is not a grand scene, but the expression of a person sharing the table or a particular bite that stays with someone after the meal.

  • Small pieces of copy still deserve care because guests read them.
  • Guest comments are read again, with thought given to the response.
  • A good memory of this place may become part of a good memory of Jeju.
